Ingredients

  • 8 oz beef stew meat, cut small
  • 1 tbsp neutral oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup crushed tomatoes
  • 2 cups beef broth
  • 1 cup sliced okra
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 cup fine semolina
  • 1 1/2 cups water
  • 1/2 tsp kosher salt

Steps

  1. Brown beef in oil in a saucepan; add onion and cook until soft.
  2. Add garlic, tomatoes, broth, coriander, cumin, and salt; cover and simmer until beef is tender, about 35 minutes.
  3. Add okra and simmer until tender, 8 minutes more.
  4. Bring water to a boil in a second saucepan; whisk in semolina and cook, stirring, until very thick and smooth, 5 minutes.
  5. Spoon the semolina base into two bowls and serve the beef and okra stew alongside it.
