Sudanese Asida Beef and Okra Stew
A smooth semolina-style base is paired with tender beef, okra, and a warmly spiced tomato stew.

Ingredients
- 8 oz beef stew meat, cut small
- 1 tbsp neutral oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 cup crushed tomatoes
- 2 cups beef broth
- 1 cup sliced okra
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 cup fine semolina
- 1 1/2 cups water
- 1/2 tsp kosher salt
Steps
- Brown beef in oil in a saucepan; add onion and cook until soft.
- Add garlic, tomatoes, broth, coriander, cumin, and salt; cover and simmer until beef is tender, about 35 minutes.
- Add okra and simmer until tender, 8 minutes more.
- Bring water to a boil in a second saucepan; whisk in semolina and cook, stirring, until very thick and smooth, 5 minutes.
- Spoon the semolina base into two bowls and serve the beef and okra stew alongside it.
