Syrian Kibbeh Bil Sanieh Beef and Bulgur Bake cut into wedges

Ingredients

  • 1/2 cup fine bulgur
  • 1/2 cup hot water
  • 8 oz ground beef
  • 1 small onion, grated
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cumin
  • 2 tbsp pine nuts
  • 1 tbsp tomato paste
  • 1 tbsp melted butter
  • 1/2 cup beef broth
  • 1/2 tsp kosher salt
  • 1 small cucumber, sliced

Steps

  1. Soak bulgur in hot water for 15 minutes, then squeeze out excess moisture.
  2. Brown half the beef with onion, allspice, cumin, pine nuts, tomato paste, and half the salt until it reaches 160°F (71°C).
  3. Mix soaked bulgur with the remaining raw beef, broth, butter, and remaining salt until it holds together.
  4. Press half the bulgur mixture into a small oiled baking dish, spread the cooked filling over it, then cover with the rest.
  5. Score the top and bake at 400°F (205°C) until browned and the center is hot, 25 minutes; serve with cucumber.
