Uzbek Beef Manti with Herb Yogurt

Steamed Uzbek beef manti dumplings with herb yogurt

Ingredients

  • 1 cup all-purpose flour
  • 1 egg
  • 3 tbsp water
  • 8 oz ground beef
  • 1/2 small onion, finely diced
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • 1 tbsp olive oil
  • 1/2 cup plain yogurt
  • 1 tbsp chopped dill
  • 1 tbsp chopped cilantro
  • 1 tsp lemon juice
  • Salt and black pepper

Steps

  1. Mix flour, egg, water and a pinch of salt into a firm dough; cover and rest 15 minutes.
  2. Mix beef, onion, garlic, cumin, oil, salt and pepper.
  3. Roll dough thin, cut into 3-inch squares, fill each with beef and pinch the corners closed securely.
  4. Steam dumplings in a lined basket for 16 to 18 minutes, until the beef reaches 160F.
  5. Stir yogurt with dill, cilantro, lemon, salt and pepper.
  6. Serve hot manti with herb yogurt and a little extra black pepper.
