Uzbek Beef Manti with Herb Yogurt

Ingredients
- 1 cup all-purpose flour
- 1 egg
- 3 tbsp water
- 8 oz ground beef
- 1/2 small onion, finely diced
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1 tbsp olive oil
- 1/2 cup plain yogurt
- 1 tbsp chopped dill
- 1 tbsp chopped cilantro
- 1 tsp lemon juice
- Salt and black pepper
Steps
- Mix flour, egg, water and a pinch of salt into a firm dough; cover and rest 15 minutes.
- Mix beef, onion, garlic, cumin, oil, salt and pepper.
- Roll dough thin, cut into 3-inch squares, fill each with beef and pinch the corners closed securely.
- Steam dumplings in a lined basket for 16 to 18 minutes, until the beef reaches 160F.
- Stir yogurt with dill, cilantro, lemon, salt and pepper.
- Serve hot manti with herb yogurt and a little extra black pepper.
