South African Cape Malay Bobotie with Yellow Rice

South African Cape Malay Bobotie with Yellow Rice, finished dish

Ingredients

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp mild curry powder
  • 1/2 tsp ground turmeric
  • 2 tbsp apricot jam
  • 1/3 cup raisins
  • 1 slice sandwich bread
  • 3/4 cup milk
  • 2 large eggs
  • 1 1/2 cups long-grain rice
  • 1 bay leaf
  • Kosher salt and black pepper

Steps

  1. Heat the oven to 375°F and soak the bread in 1/4 cup milk.
  2. Cook onion and beef in oil until browned; add garlic, curry powder, turmeric, jam, raisins and squeezed bread.
  3. Season, place in a baking dish and smooth the top.
  4. Whisk eggs with remaining milk, pour over the beef and add bay leaf; bake until set and beef reaches 160°F, about 25 minutes.
  5. Meanwhile cook rice with a pinch of turmeric; serve beside the bobotie.
