South African Cape Malay Bobotie with Yellow Rice
Curried beef with fruit bakes beneath a savory egg custard and comes with turmeric-yellow rice.

Ingredients
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp mild curry powder
- 1/2 tsp ground turmeric
- 2 tbsp apricot jam
- 1/3 cup raisins
- 1 slice sandwich bread
- 3/4 cup milk
- 2 large eggs
- 1 1/2 cups long-grain rice
- 1 bay leaf
- Kosher salt and black pepper
Steps
- Heat the oven to 375°F and soak the bread in 1/4 cup milk.
- Cook onion and beef in oil until browned; add garlic, curry powder, turmeric, jam, raisins and squeezed bread.
- Season, place in a baking dish and smooth the top.
- Whisk eggs with remaining milk, pour over the beef and add bay leaf; bake until set and beef reaches 160°F, about 25 minutes.
- Meanwhile cook rice with a pinch of turmeric; serve beside the bobotie.
