Senegalese Mafe Beef with rice and vegetables

Ingredients

  • 8 oz beef stew meat, cut small
  • 1 tbsp oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup crushed tomatoes
  • 1 cup beef broth
  • 1/3 cup unsweetened peanut butter
  • 1 small sweet potato, cubed
  • 1 carrot, sliced
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice

Steps

  1. Brown beef in oil, then add onion and garlic and cook until fragrant.
  2. Stir in tomatoes, broth, cumin, and salt; cover and simmer until beef starts to tenderize, about 25 minutes.
  3. Whisk peanut butter with some hot broth until smooth and return it to the pot.
  4. Add sweet potato and carrot and simmer until tender and the sauce is thick, 15 minutes.
  5. Serve over warm rice.
