Senegalese Mafe Beef with Rice
Beef, sweet potato, carrot, and peanut-tomato sauce create a rich Senegalese-style supper sized for two.

Ingredients
- 8 oz beef stew meat, cut small
- 1 tbsp oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 cup crushed tomatoes
- 1 cup beef broth
- 1/3 cup unsweetened peanut butter
- 1 small sweet potato, cubed
- 1 carrot, sliced
- 1/2 tsp ground cumin
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
Steps
- Brown beef in oil, then add onion and garlic and cook until fragrant.
- Stir in tomatoes, broth, cumin, and salt; cover and simmer until beef starts to tenderize, about 25 minutes.
- Whisk peanut butter with some hot broth until smooth and return it to the pot.
- Add sweet potato and carrot and simmer until tender and the sauce is thick, 15 minutes.
- Serve over warm rice.
