Puerto Rican Pastelón Plantain Beef Bake

Ingredients
- 2 ripe plantains, sliced lengthwise
- 1 tbsp oil
- 8 oz ground beef
- 1/2 onion, diced
- 1 garlic clove, minced
- 1/2 cup tomato sauce
- 1/4 cup diced green olives
- 1/2 tsp dried oregano
- 1 egg, beaten
- 1/2 cup shredded mozzarella
- Salt and black pepper
Steps
- Heat oven to 400°F. Pan-fry plantain slices in oil until golden and set aside.
- Brown beef, then cook with onion and garlic until softened.
- Add tomato sauce, olives, oregano, salt and pepper; simmer until thick.
- Layer half the plantains in a small baking dish, add beef, then top with remaining plantains, egg and cheese.
- Bake until browned and bubbling, 18 to 22 minutes. Rest 8 minutes before slicing.
