Puerto Rican Pastelón Plantain Beef Bake, finished dish

Ingredients

  • 2 ripe plantains, sliced lengthwise
  • 1 tbsp oil
  • 8 oz ground beef
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1/2 cup tomato sauce
  • 1/4 cup diced green olives
  • 1/2 tsp dried oregano
  • 1 egg, beaten
  • 1/2 cup shredded mozzarella
  • Salt and black pepper

Steps

  1. Heat oven to 400°F. Pan-fry plantain slices in oil until golden and set aside.
  2. Brown beef, then cook with onion and garlic until softened.
  3. Add tomato sauce, olives, oregano, salt and pepper; simmer until thick.
  4. Layer half the plantains in a small baking dish, add beef, then top with remaining plantains, egg and cheese.
  5. Bake until browned and bubbling, 18 to 22 minutes. Rest 8 minutes before slicing.
