Thai Kua Kling Turkey Basil Skillet

Ingredients
- 300 g ground turkey
- 1 tbsp neutral oil
- 1 small shallot, finely diced
- 3 garlic cloves, minced
- 1 tsp grated ginger
- 1 tbsp red curry paste
- 1 tsp ground turmeric
- 120 g green beans, cut short
- 1 tbsp fish sauce
- 1 tsp brown sugar
- 25 g Thai basil leaves
- 2 cups cooked jasmine rice
Steps
- Heat a wide skillet over medium-high heat and have the curry paste, aromatics, beans, and basil ready beside the stove.
- Add oil and cook shallot for 2 minutes, then add garlic, ginger, curry paste, and turmeric for 30 seconds.
- Add turkey and break it into very small pieces, cooking for 6 to 7 minutes until no pink remains and it reaches 71 C.
- Stir in green beans, fish sauce, sugar, and 2 tablespoons water and cook for 3 minutes until beans are crisp-tender.
- Keep stirring until the pan is nearly dry and the turkey is coated in the aromatic paste.
- Turn off heat, fold in basil until just wilted, and serve over jasmine rice.
