Bosnian Grah Bean Stew with Smoked Turkey
Smoky turkey, white beans and paprika make a thick Bosnian-style stew suited to two hungry diners.

Ingredients
- 1 tbsp olive oil
- 1/2 small onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 garlic clove, minced
- 1 tsp sweet paprika
- 1 can cannellini beans, drained
- 6 oz smoked turkey, diced
- 1 1/2 cups chicken stock
- 1 tbsp tomato paste
- 2 tbsp chopped parsley
- Salt and black pepper
- 4 slices rye bread, for serving
Steps
- Warm oil in a saucepan and cook onion, carrot and celery until softened.
- Add garlic, paprika and tomato paste and stir for 30 seconds.
- Add beans, turkey and stock and bring to a gentle simmer.
- Cook uncovered until vegetables are tender and the broth thickens, about 20 minutes.
- Mash a few beans against the pan to make the stew creamier and season to taste.
- Finish with parsley and serve with rye bread.
