Bosnian Grah Bean Stew with Smoked Turkey

Smoky turkey, white beans and paprika make a thick Bosnian-style stew suited to two hungry diners.

White bean stew with smoked turkey, carrots and paprika

Ingredients

  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 garlic clove, minced
  • 1 tsp sweet paprika
  • 1 can cannellini beans, drained
  • 6 oz smoked turkey, diced
  • 1 1/2 cups chicken stock
  • 1 tbsp tomato paste
  • 2 tbsp chopped parsley
  • Salt and black pepper
  • 4 slices rye bread, for serving

Steps

  1. Warm oil in a saucepan and cook onion, carrot and celery until softened.
  2. Add garlic, paprika and tomato paste and stir for 30 seconds.
  3. Add beans, turkey and stock and bring to a gentle simmer.
  4. Cook uncovered until vegetables are tender and the broth thickens, about 20 minutes.
  5. Mash a few beans against the pan to make the stew creamier and season to taste.
  6. Finish with parsley and serve with rye bread.
