Moroccan Kefta Meatballs with Tomato Sauce and parsley

Ingredients

  • 10 oz ground beef
  • 2 tbsp grated onion
  • 2 tbsp chopped parsley
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp sweet paprika
  • 1 tbsp olive oil
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1/2 tsp kosher salt
  • 2 small pieces crusty bread

Steps

  1. Mix beef, onion, parsley, garlic, cumin, paprika, and 1/4 teaspoon salt; shape into 12 small meatballs.
  2. Heat olive oil in a skillet over medium heat and brown the meatballs on two sides, about 5 minutes total.
  3. Stir in crushed tomatoes, tomato paste, and the remaining salt with 1/4 cup water.
  4. Cover and simmer until the sauce is thick and the meatballs reach 160°F (71°C), 10 to 12 minutes.
  5. Spoon into two bowls, scatter with parsley, and serve with bread.
