Somali Spiced Beef Suqaar with Flatbread, finished dish

Ingredients

  • 1 1/4 lb sirloin, cut into small cubes
  • 1 tbsp vegetable oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cardamom
  • 1 tomato, diced
  • 1 lime
  • 1/3 cup chopped cilantro
  • 4 flatbreads
  • Kosher salt and black pepper

Steps

  1. Pat beef dry and season with salt and pepper.
  2. Sear beef in hot oil in two batches until browned; return all beef to the pan.
  3. Add onion and bell pepper and cook until crisp-tender, 5 minutes.
  4. Stir in garlic, cumin, coriander, cardamom and tomato and cook until beef reaches at least 145°F, 3 to 4 minutes.
  5. Add lime juice and cilantro and serve with warmed flatbread.
