Somali Spiced Beef Suqaar with Flatbread
Quick-cooked beef, peppers and onions are fragrant with cumin, cardamom and a squeeze of lime.

Ingredients
- 1 1/4 lb sirloin, cut into small cubes
- 1 tbsp vegetable oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cardamom
- 1 tomato, diced
- 1 lime
- 1/3 cup chopped cilantro
- 4 flatbreads
- Kosher salt and black pepper
Steps
- Pat beef dry and season with salt and pepper.
- Sear beef in hot oil in two batches until browned; return all beef to the pan.
- Add onion and bell pepper and cook until crisp-tender, 5 minutes.
- Stir in garlic, cumin, coriander, cardamom and tomato and cook until beef reaches at least 145°F, 3 to 4 minutes.
- Add lime juice and cilantro and serve with warmed flatbread.
