Malaysian Beef Satay with Cucumber Rice, finished dish

Ingredients

  • 1 1/2 pounds beef sirloin, cut into thin strips
  • 1 tablespoon neutral oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1/2 cup smooth peanut butter
  • 1 tablespoon lime juice
  • 1/2 cup warm water
  • 1 cucumber, sliced
  • 4 cups cooked coconut or jasmine rice

Steps

  1. Toss the beef with oil, turmeric, coriander, cumin, brown sugar, and soy sauce. Marinate for 20 minutes while soaking wooden skewers if needed.
  2. Thread the beef onto skewers in loose folds so the heat can reach the center.
  3. Whisk peanut butter, lime juice, warm water, and 1 teaspoon soy sauce into a smooth dipping sauce.
  4. Grill or broil the skewers over high heat for 6 to 8 minutes, turning once or twice, until browned and cooked through.
  5. Rest the skewers for 3 minutes and season the cucumber with a pinch of salt.
  6. Serve with peanut sauce, cucumber, and warm rice.
