Sierra Leonean Cassava Leaf Beef Stew

Ingredients
- 8 oz beef stew meat, cut small
- 1 tbsp oil
- 1 small onion, diced
- 1 garlic clove, minced
- 2 cups finely chopped kale
- 1/4 cup unsweetened peanut butter
- 1 cup beef broth
- 1 cup crushed tomatoes
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
Steps
- Brown beef in oil in a saucepan; add onion and garlic and cook 2 minutes.
- Stir in tomatoes, broth, ginger, cayenne, and salt; cover and simmer until beef is tender, about 30 minutes.
- Whisk peanut butter with a ladle of broth until smooth, then stir it into the stew.
- Add kale and simmer until very tender and dark green, 10 minutes.
- Serve the stew over warm rice.
