Sierra Leonean Cassava Leaf Beef Stew with rice

Ingredients

  • 8 oz beef stew meat, cut small
  • 1 tbsp oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 2 cups finely chopped kale
  • 1/4 cup unsweetened peanut butter
  • 1 cup beef broth
  • 1 cup crushed tomatoes
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice

Steps

  1. Brown beef in oil in a saucepan; add onion and garlic and cook 2 minutes.
  2. Stir in tomatoes, broth, ginger, cayenne, and salt; cover and simmer until beef is tender, about 30 minutes.
  3. Whisk peanut butter with a ladle of broth until smooth, then stir it into the stew.
  4. Add kale and simmer until very tender and dark green, 10 minutes.
  5. Serve the stew over warm rice.
