Libyan Shorba Frik Beef Soup
Tomato-rich beef soup with cracked wheat, celery, and cilantro makes a filling but manageable supper.

Ingredients
- 8 oz beef stew meat, cut small
- 1 tbsp olive oil
- 1 small onion, diced
- 1 celery stalk, diced
- 1 small carrot, diced
- 1 garlic clove, minced
- 1/2 tsp ground coriander
- 1 cup crushed tomatoes
- 3 cups low-sodium beef broth
- 1/3 cup cracked wheat
- 2 tbsp chopped cilantro
- 1/2 tsp kosher salt
Steps
- Brown the beef in olive oil in a saucepan over medium-high heat.
- Add onion, celery, carrot, garlic, and coriander; cook until fragrant, 3 minutes.
- Stir in tomatoes, broth, and salt; cover and simmer until beef is tender, about 30 minutes.
- Add cracked wheat and simmer uncovered until tender and the soup is lightly thickened, 12 to 15 minutes.
- Stir in cilantro, rest 3 minutes, and divide between two bowls.
