Tajik Qurutob-Inspired Tomato Bread Salad
Warm flatbread, tangy yogurt, tomatoes and fresh herbs layer into a quick Tajik-inspired vegetarian meal.

Ingredients
- 4 large flatbreads or pitas
- 1 1/2 cups plain Greek yogurt
- 1/3 cup warm water
- 1 garlic clove, finely grated
- 2 tbsp olive oil
- 1 small red onion, thinly sliced
- 3 tomatoes, diced
- 1 English cucumber, diced
- 1 cup chopped cilantro, dill and parsley
- 1 tsp ground coriander
- Kosher salt and black pepper
Steps
- Warm flatbreads in a dry skillet until flexible, then tear them into bite-size pieces and arrange in a broad serving bowl.
- Whisk yogurt, warm water, garlic, 1 tablespoon olive oil, coriander, salt and pepper until pourable.
- Pour half the yogurt mixture over the bread and let it soften for 3 minutes.
- Toss onion, tomatoes, cucumber and herbs with remaining oil, salt and pepper.
- Spoon vegetables over the softened bread and drizzle with remaining yogurt sauce.
- Serve right away while the bread retains some texture.
