- 10 oz lean ground beef
- 2 small flatbreads
- 1 tomato, diced
- 1 tbsp olive oil or unsalted butter
- 1 small onion or 2 scallions, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp ground allspice
- 1/2 lemon, cut into wedges
- 1/4 cup fresh herbs, chopped
- Kosher salt and freshly ground black pepper
Steps
- Heat the oven to 450F (230C) with a baking sheet inside, so the breads crisp from below as soon as they land.
- Put the diced tomato in a sieve and press out its juice, discarding the liquid. Wet topping slides off the bread and steams the meat instead of browning it.
- Mix the ground beef with the drained tomato, onion, garlic, allspice, 1/2 teaspoon salt, black pepper, and a good squeeze of lemon. The raw mixture should taste sharp and well seasoned.
- Spread the mixture over the flatbreads in a thin, even layer no thicker than 1/4 inch, going right to the edges so nothing scorches.
- Slide the breads onto the hot sheet and bake for 8 to 10 minutes, until the meat is browned with no pink left and the bread edges are crisp.
- Check the centre of the topping with the tip of a knife; the juices should run clear. Give it 2 minutes more if not.
- Drizzle with the oil or melted butter, scatter with the fresh herbs, and serve hot with lemon wedges to squeeze over.
