Bolivian Saice Beef with Potatoes

Bolivian Saice Beef with Potatoes, finished dish

Ingredients

  • 8 oz ground beef
  • 1 tbsp oil
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1 small potato, diced
  • 1 cup crushed tomatoes
  • 1/2 cup beef broth
  • 1/2 tsp ground cumin
  • 1/3 cup frozen peas
  • 1 hard-cooked egg, quartered
  • 1 cup cooked rice
  • Salt and black pepper

Steps

  1. Brown beef in oil, breaking it into small pieces. Drain excess fat if needed.
  2. Add onion, garlic and potato; cook until the onion softens.
  3. Stir in tomatoes, broth and cumin. Simmer covered until potato is tender, about 15 minutes.
  4. Add peas and cook 3 minutes more, until the sauce is thick and glossy, then season with salt and black pepper.
  5. Serve with rice and top each portion with hard-cooked egg.
