French Steak Frites with Shallot Butter
Pan-seared steak, crisp oven fries and shallot butter make a small-scale French bistro dinner at home.

Ingredients
- 10 oz sirloin steak
- 12 oz potatoes, cut into fries
- 1 tbsp olive oil
- 2 tbsp butter, divided
- 1 small shallot, minced
- 1 tsp Dijon mustard
- 1 tsp chopped parsley
- 1 tsp lemon juice
- 2 cups watercress
- Salt and black pepper
Steps
- Heat oven to 450F, toss potatoes with oil, salt and pepper, and roast until crisp, turning once.
- Pat steak dry, season well and let it sit at room temperature while fries begin cooking.
- Sear steak in 1 tablespoon butter in a hot skillet until browned and cooked to your preferred safe doneness; rest 5 minutes.
- Lower heat, cook shallot in the same skillet until soft, then stir in remaining butter, mustard, parsley and lemon.
- Slice steak across the grain and spoon over shallot butter.
- Serve with fries and lightly dressed watercress.
