French Steak Frites with Shallot Butter

Sliced steak frites with herb shallot butter

Ingredients

  • 10 oz sirloin steak
  • 12 oz potatoes, cut into fries
  • 1 tbsp olive oil
  • 2 tbsp butter, divided
  • 1 small shallot, minced
  • 1 tsp Dijon mustard
  • 1 tsp chopped parsley
  • 1 tsp lemon juice
  • 2 cups watercress
  • Salt and black pepper

Steps

  1. Heat oven to 450F, toss potatoes with oil, salt and pepper, and roast until crisp, turning once.
  2. Pat steak dry, season well and let it sit at room temperature while fries begin cooking.
  3. Sear steak in 1 tablespoon butter in a hot skillet until browned and cooked to your preferred safe doneness; rest 5 minutes.
  4. Lower heat, cook shallot in the same skillet until soft, then stir in remaining butter, mustard, parsley and lemon.
  5. Slice steak across the grain and spoon over shallot butter.
  6. Serve with fries and lightly dressed watercress.
