Kenyan Beef Pilau with tomato cucumber kachumbari

Ingredients

  • 8 oz beef sirloin, cut into small cubes
  • 1 tbsp oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 tsp pilau masala or garam masala
  • 3/4 cup long-grain rice, rinsed
  • 1 1/2 cups beef broth
  • 1 tomato, diced
  • 1/2 cucumber, diced
  • 2 tbsp diced red onion
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt

Steps

  1. Brown the beef in oil over medium-high heat; transfer to a plate.
  2. Cook the onion until golden, add garlic and pilau masala, and stir for 30 seconds.
  3. Add rice, broth, beef, and 1/4 teaspoon salt; cover and cook on low until the rice is tender, about 18 minutes.
  4. Toss tomato, cucumber, red onion, lemon juice, and remaining salt for the kachumbari.
  5. Rest rice 5 minutes, fluff it, and serve with the fresh salad.
