Kenyan Beef Pilau with Kachumbari

Ingredients
- 8 oz beef sirloin, cut into small cubes
- 1 tbsp oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 tsp pilau masala or garam masala
- 3/4 cup long-grain rice, rinsed
- 1 1/2 cups beef broth
- 1 tomato, diced
- 1/2 cucumber, diced
- 2 tbsp diced red onion
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
Steps
- Brown the beef in oil over medium-high heat; transfer to a plate.
- Cook the onion until golden, add garlic and pilau masala, and stir for 30 seconds.
- Add rice, broth, beef, and 1/4 teaspoon salt; cover and cook on low until the rice is tender, about 18 minutes.
- Toss tomato, cucumber, red onion, lemon juice, and remaining salt for the kachumbari.
- Rest rice 5 minutes, fluff it, and serve with the fresh salad.
