Malagasy Romazava Beef with greens and rice

Ingredients

  • 8 oz beef sirloin, cut into small cubes
  • 1 tsp oil
  • 1 small onion, sliced
  • 1 tbsp grated ginger
  • 1 garlic clove, minced
  • 2 cups beef broth
  • 1 small tomato, chopped
  • 3 cups baby spinach
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice

Steps

  1. Brown beef in oil in a saucepan, then add onion, ginger, and garlic for 2 minutes.
  2. Add broth, tomato, soy sauce, and salt; simmer until beef is tender, 20 to 25 minutes.
  3. Add spinach and simmer until wilted but still bright.
  4. Stir in lemon juice and taste for salt.
  5. Divide rice between two bowls and ladle over the beef, greens, and broth.
