Malagasy Romazava Beef with Greens

Ingredients
- 8 oz beef sirloin, cut into small cubes
- 1 tsp oil
- 1 small onion, sliced
- 1 tbsp grated ginger
- 1 garlic clove, minced
- 2 cups beef broth
- 1 small tomato, chopped
- 3 cups baby spinach
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
Steps
- Brown beef in oil in a saucepan, then add onion, ginger, and garlic for 2 minutes.
- Add broth, tomato, soy sauce, and salt; simmer until beef is tender, 20 to 25 minutes.
- Add spinach and simmer until wilted but still bright.
- Stir in lemon juice and taste for salt.
- Divide rice between two bowls and ladle over the beef, greens, and broth.
