Honduran Baleadas with Beans and Eggs
Soft tortillas spread with creamy beans, eggs and avocado make an inexpensive, speedy Honduran-inspired dinner.

Ingredients
- 4 medium flour tortillas
- 1 tbsp olive oil
- 1/2 cup refried black beans
- 2 tbsp water
- 4 large eggs
- 1/2 avocado, sliced
- 1/3 cup crumbled queso fresco
- 2 tbsp crema or sour cream
- 2 tbsp chopped cilantro
- Hot sauce, to taste
- Kosher salt and black pepper
Steps
- Warm tortillas in a dry skillet over medium heat until flexible, then stack and wrap in a towel to keep warm.
- Warm the refried beans with water in a small saucepan, stirring until smooth and spreadable.
- Heat olive oil in a nonstick skillet and cook eggs to your preferred doneness; season with salt and pepper.
- Spread each tortilla with beans, then add an egg, avocado, queso fresco, crema and cilantro.
- Add hot sauce if desired, fold each baleada in half, and serve right away.
