French Quiche Lorraine with Frisee Salad
A quick shortcrust quiche with bacon, custard and frisee salad is sized for a relaxed dinner for two.

Ingredients
- 1 small prepared pie crust
- 3 slices bacon, chopped
- 2 eggs
- 1/2 cup half-and-half
- 1/2 cup grated Gruyere
- 1/4 tsp nutmeg
- 1 tsp Dijon mustard
- 2 cups frisee or mixed greens
- 1 tbsp olive oil
- 1 tsp sherry vinegar
- Salt and black pepper
Steps
- Heat oven to 400F and fit pie crust into a 6- to 7-inch tart pan or small ovenproof skillet.
- Cook bacon until crisp, then drain on paper towel.
- Whisk eggs, half-and-half, Gruyere, nutmeg, Dijon, salt and pepper.
- Scatter bacon in the crust and pour in custard.
- Bake until the center is set and the crust is golden, 24 to 28 minutes.
- Rest 8 minutes, toss greens with oil and vinegar, and serve alongside.
