Quiche Lorraine slices with a crisp frisee salad

Ingredients

  • 1 small prepared pie crust
  • 3 slices bacon, chopped
  • 2 eggs
  • 1/2 cup half-and-half
  • 1/2 cup grated Gruyere
  • 1/4 tsp nutmeg
  • 1 tsp Dijon mustard
  • 2 cups frisee or mixed greens
  • 1 tbsp olive oil
  • 1 tsp sherry vinegar
  • Salt and black pepper

Steps

  1. Heat oven to 400F and fit pie crust into a 6- to 7-inch tart pan or small ovenproof skillet.
  2. Cook bacon until crisp, then drain on paper towel.
  3. Whisk eggs, half-and-half, Gruyere, nutmeg, Dijon, salt and pepper.
  4. Scatter bacon in the crust and pour in custard.
  5. Bake until the center is set and the crust is golden, 24 to 28 minutes.
  6. Rest 8 minutes, toss greens with oil and vinegar, and serve alongside.
