Cuban Mojo Pork with Black Beans

Cuban Mojo Pork with Black Beans, finished dish

Ingredients

  • 10 oz pork tenderloin
  • 1 orange, zested and juiced
  • 1 lime, juiced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 1 can black beans, drained
  • 1/2 onion, sliced
  • 1 cup cooked rice
  • 1 small ripe plantain, sliced
  • Salt and black pepper

Steps

  1. Mix orange juice, lime juice, garlic, oregano, salt and pepper. Marinate pork in half the mixture for 10 minutes.
  2. Sear pork in oil, then reduce heat and cook until the center reaches 145°F; rest 5 minutes before slicing.
  3. Cook sliced onion until golden. Add black beans and the remaining citrus mixture and warm through.
  4. Pan-fry plantain slices until caramelized on both sides.
  5. Serve sliced pork with beans, rice, plantain and spoonfuls of the pan juices.
