Cuban Mojo Pork with Black Beans
Citrus-garlic pork, black beans, rice and plantains create a complete Cuban-inspired plate.

Ingredients
- 10 oz pork tenderloin
- 1 orange, zested and juiced
- 1 lime, juiced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tbsp olive oil
- 1 can black beans, drained
- 1/2 onion, sliced
- 1 cup cooked rice
- 1 small ripe plantain, sliced
- Salt and black pepper
Steps
- Mix orange juice, lime juice, garlic, oregano, salt and pepper. Marinate pork in half the mixture for 10 minutes.
- Sear pork in oil, then reduce heat and cook until the center reaches 145°F; rest 5 minutes before slicing.
- Cook sliced onion until golden. Add black beans and the remaining citrus mixture and warm through.
- Pan-fry plantain slices until caramelized on both sides.
- Serve sliced pork with beans, rice, plantain and spoonfuls of the pan juices.
