Finnish Salmon Soup with Dill

Finnish salmon potato soup with dill

Ingredients

  • 8 oz salmon fillet, skin removed
  • 1 tbsp butter
  • 1/2 small leek, sliced
  • 1 small potato, diced
  • 1 carrot, diced
  • 2 cups fish or vegetable stock
  • 1/3 cup cream
  • 1 bay leaf
  • 2 tbsp chopped dill
  • 1 tsp lemon juice
  • Salt and black pepper
  • 4 slices rye bread, for serving

Steps

  1. Melt butter in a saucepan and soften leek, potato and carrot for 5 minutes.
  2. Add stock and bay leaf and simmer until vegetables are nearly tender.
  3. Cut salmon into large cubes and add them to the gently simmering soup.
  4. Cook until salmon flakes and reaches 145F, about 4 minutes.
  5. Stir in cream, dill and lemon juice and warm through without boiling hard.
  6. Remove bay leaf, season and serve with rye bread.
