Finnish Salmon Soup with Dill
Creamy salmon, potato and dill soup makes a clean, comforting Finnish-style dinner for two.

Ingredients
- 8 oz salmon fillet, skin removed
- 1 tbsp butter
- 1/2 small leek, sliced
- 1 small potato, diced
- 1 carrot, diced
- 2 cups fish or vegetable stock
- 1/3 cup cream
- 1 bay leaf
- 2 tbsp chopped dill
- 1 tsp lemon juice
- Salt and black pepper
- 4 slices rye bread, for serving
Steps
- Melt butter in a saucepan and soften leek, potato and carrot for 5 minutes.
- Add stock and bay leaf and simmer until vegetables are nearly tender.
- Cut salmon into large cubes and add them to the gently simmering soup.
- Cook until salmon flakes and reaches 145F, about 4 minutes.
- Stir in cream, dill and lemon juice and warm through without boiling hard.
- Remove bay leaf, season and serve with rye bread.
