French Lentil Salad with Smoked Trout

Earthy lentils, smoked trout, soft egg and sharp mustard dressing make a composed French-style meal for two.

Lentil salad with smoked trout, egg and radishes

Ingredients

  • 3/4 cup French green lentils
  • 4 oz smoked trout
  • 2 eggs
  • 4 radishes, sliced
  • 1/4 small red onion, thinly sliced
  • 2 tbsp chopped parsley
  • 1 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt and black pepper

Steps

  1. Rinse lentils, cover with water and simmer until tender but intact, about 22 minutes; drain well.
  2. Boil eggs for 9 minutes, cool under water, peel and halve.
  3. Whisk mustard, vinegar, oil, honey, salt and pepper into a dressing.
  4. Toss warm lentils with half the dressing, onion, radishes and parsley.
  5. Divide lentils into two bowls and add smoked trout and egg halves.
  6. Drizzle with remaining dressing and serve immediately.
