French Lentil Salad with Smoked Trout
Earthy lentils, smoked trout, soft egg and sharp mustard dressing make a composed French-style meal for two.

Ingredients
- 3/4 cup French green lentils
- 4 oz smoked trout
- 2 eggs
- 4 radishes, sliced
- 1/4 small red onion, thinly sliced
- 2 tbsp chopped parsley
- 1 tsp Dijon mustard
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp honey
- Salt and black pepper
Steps
- Rinse lentils, cover with water and simmer until tender but intact, about 22 minutes; drain well.
- Boil eggs for 9 minutes, cool under water, peel and halve.
- Whisk mustard, vinegar, oil, honey, salt and pepper into a dressing.
- Toss warm lentils with half the dressing, onion, radishes and parsley.
- Divide lentils into two bowls and add smoked trout and egg halves.
- Drizzle with remaining dressing and serve immediately.
