Filipino Pork Sisig with Rice

Ingredients
- 10 ounces pork shoulder, small diced
- 1 tablespoon neutral oil
- 1/2 onion, finely diced
- 1 red chile, minced
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon calamansi or lime juice
- 1 teaspoon sugar
- 1 teaspoon mayonnaise
- 1 large egg
- 2 cups cooked rice
- scallions and lime wedges, to serve
Steps
- Heat oil in a skillet over medium heat. Cook pork for 10 to 12 minutes, stirring often, until browned, crisp in places, and reaches 145°F.
- Add onion, chile, and garlic and cook for 2 minutes until softened.
- Stir in soy sauce, calamansi juice, and sugar. Cook 1 minute until the pan is glossy.
- Fold in mayonnaise, then make a small space in the pan and scramble the egg until fully set before mixing through.
- Serve the sizzling pork over rice with scallions and lime wedges.
