Portuguese Pork Bifana Sandwiches with Pickles

Ingredients
- 10 oz pork loin, thinly sliced
- 2 crusty rolls
- 2 garlic cloves, minced
- 1 tsp sweet paprika
- 1 tsp Dijon mustard
- 1/4 cup chicken stock
- 1 tbsp olive oil
- 1/4 small onion, thinly sliced
- 1/4 cucumber, thinly sliced
- 1 tbsp cider vinegar
- 1 tsp sugar
- Salt and black pepper
Steps
- Toss onion and cucumber with vinegar, sugar and a pinch of salt; set aside to pickle.
- Season pork with garlic, paprika, mustard, salt and pepper.
- Heat oil in a skillet and brown pork in batches until it reaches 145F, then transfer to a plate.
- Add stock to the skillet and scrape up browned bits; return pork just long enough to coat.
- Warm rolls and fill with the saucy pork.
- Drain pickles slightly and add them to the sandwiches before serving.
