Egyptian Hawawshi-Inspired Beef Pita

Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 small onion, very finely diced
- 1 small green bell pepper, very finely diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon kosher salt
- 1/3 cup chopped parsley
- 4 large pita breads
- 2 tablespoons melted butter or olive oil
- Cucumber-tomato salad, for serving
Steps
- Heat the oven to 425°F (220°C) and line a baking sheet with parchment.
- Mix the beef, onion, bell pepper, garlic, spices, salt, and parsley in a bowl until evenly combined.
- Split each pita to make a pocket and press one-quarter of the beef mixture into each pita in a thin, even layer.
- Brush both sides of the pitas with melted butter or oil and place them on the baking sheet.
- Bake for 14 to 16 minutes, turning once, until crisp and the beef reaches 160°F (71°C).
- Rest for 3 minutes, cut into wedges, and serve with cucumber-tomato salad.
