Egyptian Hawawshi-inspired beef pita cut into crisp wedges

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small onion, very finely diced
  • 1 small green bell pepper, very finely diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon kosher salt
  • 1/3 cup chopped parsley
  • 4 large pita breads
  • 2 tablespoons melted butter or olive oil
  • Cucumber-tomato salad, for serving

Steps

  1. Heat the oven to 425°F (220°C) and line a baking sheet with parchment.
  2. Mix the beef, onion, bell pepper, garlic, spices, salt, and parsley in a bowl until evenly combined.
  3. Split each pita to make a pocket and press one-quarter of the beef mixture into each pita in a thin, even layer.
  4. Brush both sides of the pitas with melted butter or oil and place them on the baking sheet.
  5. Bake for 14 to 16 minutes, turning once, until crisp and the beef reaches 160°F (71°C).
  6. Rest for 3 minutes, cut into wedges, and serve with cucumber-tomato salad.
