Croatian Pasticada-Inspired Beef with Gnocchi

Croatian-inspired tomato braised beef with gnocchi

Ingredients

  • 10 oz beef stew meat, cubed
  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 1 carrot, diced
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 3/4 cup crushed tomatoes
  • 1 tbsp red wine vinegar
  • 1 tsp brown sugar
  • 1/2 cup beef stock
  • 8 oz potato gnocchi
  • 1 tbsp chopped parsley

Steps

  1. Pat beef dry, season, and brown it in oil in a small Dutch oven.
  2. Add onion and carrot and cook until softened, then add garlic and tomato paste.
  3. Stir in tomatoes, vinegar, sugar and stock, scraping the pan well.
  4. Cover and simmer gently until beef is tender and reaches a safe 145F or higher, about 30 minutes.
  5. Cook gnocchi in simmering water until they float, then drain.
  6. Taste sauce, toss in gnocchi or spoon it over, and finish with parsley.
