Croatian Pasticada-Inspired Beef with Gnocchi
Quick-braised beef in a sweet-sour tomato sauce and tender gnocchi gives a two-person nod to Croatian pasticada.

Ingredients
- 10 oz beef stew meat, cubed
- 1 tbsp olive oil
- 1/2 small onion, diced
- 1 carrot, diced
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 3/4 cup crushed tomatoes
- 1 tbsp red wine vinegar
- 1 tsp brown sugar
- 1/2 cup beef stock
- 8 oz potato gnocchi
- 1 tbsp chopped parsley
Steps
- Pat beef dry, season, and brown it in oil in a small Dutch oven.
- Add onion and carrot and cook until softened, then add garlic and tomato paste.
- Stir in tomatoes, vinegar, sugar and stock, scraping the pan well.
- Cover and simmer gently until beef is tender and reaches a safe 145F or higher, about 30 minutes.
- Cook gnocchi in simmering water until they float, then drain.
- Taste sauce, toss in gnocchi or spoon it over, and finish with parsley.
