Botswanan Seswaa Beef with pap and tomato relish

Ingredients

  • 10 oz beef chuck, cut into cubes
  • 2 cups beef broth
  • 1 small onion, sliced
  • 1 garlic clove, smashed
  • 1 bay leaf
  • 1/2 tsp kosher salt
  • 1/2 cup fine cornmeal
  • 1 1/2 cups water
  • 1 small tomato, diced
  • 1 tbsp diced onion
  • 1 tsp lemon juice
  • 1 tbsp chopped cilantro

Steps

  1. Cover beef with broth, sliced onion, garlic, bay leaf, and salt; simmer covered until very tender, 50 to 60 minutes.
  2. Remove bay leaf and shred the beef with two forks, adding a little broth to keep it moist.
  3. Bring water to a boil in a second pot and whisk in cornmeal; cook, stirring, until smooth and thick, 5 minutes.
  4. Mix tomato, diced onion, lemon juice, and cilantro for a fresh relish.
  5. Spoon pap onto two plates and serve with seswaa and tomato relish.
