Belizean Fry Jacks with Beans and Eggs
Puffy fried dough, black beans and softly cooked eggs turn a Belizean breakfast classic into a hearty dinner.

Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/3 cup warm water
- Neutral oil, for frying
- 1 tbsp olive oil
- 1/2 cup black beans, drained and rinsed
- 1/4 tsp ground cumin
- 4 large eggs
- 1/2 avocado, sliced
- 1/3 cup crumbled queso fresco
- 2 tbsp salsa roja
- 2 tbsp chopped cilantro
- Kosher salt and black pepper
Steps
- Mix flour, baking powder, a pinch of salt and warm water into a soft dough. Rest it under a bowl for 10 minutes.
- Warm black beans with olive oil, cumin and 2 tablespoons water, then lightly mash them with a fork.
- Divide dough into four pieces, roll thin, cut a small slit in each center, and fry in hot oil until puffed and golden. Drain on a rack.
- Cook eggs in a nonstick skillet to your preferred doneness; season with salt and pepper.
- Serve fry jacks with beans, eggs, avocado, queso fresco, salsa and cilantro.
