Belizean Fry Jacks with Beans and Eggs

Puffy fry jacks with black beans, eggs, avocado and cheese

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/3 cup warm water
  • Neutral oil, for frying
  • 1 tbsp olive oil
  • 1/2 cup black beans, drained and rinsed
  • 1/4 tsp ground cumin
  • 4 large eggs
  • 1/2 avocado, sliced
  • 1/3 cup crumbled queso fresco
  • 2 tbsp salsa roja
  • 2 tbsp chopped cilantro
  • Kosher salt and black pepper

Steps

  1. Mix flour, baking powder, a pinch of salt and warm water into a soft dough. Rest it under a bowl for 10 minutes.
  2. Warm black beans with olive oil, cumin and 2 tablespoons water, then lightly mash them with a fork.
  3. Divide dough into four pieces, roll thin, cut a small slit in each center, and fry in hot oil until puffed and golden. Drain on a rack.
  4. Cook eggs in a nonstick skillet to your preferred doneness; season with salt and pepper.
  5. Serve fry jacks with beans, eggs, avocado, queso fresco, salsa and cilantro.
