Zimbabwean Peanut Greens with Sadza, finished dish

Ingredients

  • 1 large bunch collard greens, stems removed and leaves sliced
  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1/2 cup natural peanut butter
  • 1 1/2 cups vegetable broth
  • 1 cup quick-cooking maize meal
  • 4 cups water
  • 1/4 tsp cayenne
  • Kosher salt

Steps

  1. Cook onion in oil until soft, then add garlic and tomatoes and cook 5 minutes.
  2. Whisk peanut butter with broth and add it to the pan.
  3. Add collard greens, cover and simmer until tender, 12 to 15 minutes; season with cayenne and salt.
  4. Bring water and 1 teaspoon salt to a simmer, whisk in maize meal and cook until thick and smooth according to package directions.
  5. Serve the peanut greens beside warm sadza.
