Zambian Ifisashi Greens with Peanut Nshima

Ingredients
- 1 tbsp oil
- 1 small onion, diced
- 1 garlic clove, minced
- 4 cups chopped spinach
- 1/4 cup unsweetened peanut butter
- 3/4 cup vegetable broth
- 1 small tomato, diced
- 1/2 tsp kosher salt
- 1/2 cup fine cornmeal
- 1 1/2 cups water
- 1 tsp lemon juice
- 1/4 tsp ground black pepper
Steps
- Cook onion in oil until soft; add garlic for 30 seconds.
- Add spinach, tomato, broth, salt, and pepper and cook until the greens collapse.
- Whisk peanut butter with a little hot broth, then stir it into the greens and simmer until creamy.
- Bring water to a boil in a second saucepan and whisk in cornmeal; stir until a smooth thick porridge forms.
- Finish greens with lemon juice and serve alongside nshima.
