Thai Pad See Ew with Chicken
Wide rice noodles, chicken, Chinese broccoli, and egg sear in a dark sweet soy sauce.

Ingredients
- 8 ounces wide rice noodles
- 8 ounces chicken breast, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon neutral oil
- 2 garlic cloves, minced
- 2 cups Chinese broccoli, chopped
- 2 large eggs
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon rice vinegar
- white pepper, to taste
Steps
- Prepare noodles according to package directions and separate them gently.
- Heat half the oil in a wok or large skillet. Cook chicken with 1 teaspoon soy sauce for 4 to 5 minutes until it reaches 165°F; transfer to a plate.
- Add remaining oil, garlic, and Chinese broccoli. Stir-fry for 2 minutes, then push vegetables aside and scramble the eggs until fully set.
- Add noodles, chicken, dark soy, oyster sauce, sugar, vinegar, and white pepper. Toss for 2 minutes until hot and lightly seared.
- Divide between two plates and serve immediately.
