Tanzanian Coconut Fish Curry with Tomatoes, finished dish

Ingredients

  • 1 1/2 lb firm white fish, cut into large pieces
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 can diced tomatoes
  • 1 can light coconut milk
  • 1 lime
  • 1/3 cup chopped cilantro
  • Cooked rice, for serving
  • Kosher salt

Steps

  1. Season the fish lightly with salt.
  2. Cook onion in oil until soft, then add garlic, ginger, turmeric and coriander.
  3. Add tomatoes and coconut milk and simmer 10 minutes.
  4. Nestle in fish, cover and simmer gently until opaque and 145°F, 7 to 10 minutes.
  5. Add lime juice, adjust seasoning and finish with cilantro; serve with rice.
