Tahitian Poisson Cru-Inspired Coconut Lime Fish
This cooked fish adaptation uses coconut, lime, tender vegetables and herbs for a bright island-style bowl.

Ingredients
- 10 oz firm white fish fillet
- 1 tbsp olive oil
- 1/2 carrot, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1/2 cucumber, sliced
- 1 cup light coconut milk
- 1 lime, zested and juiced
- 1 garlic clove, minced
- 2 tbsp chopped cilantro
- 1/2 cup cooked rice
- Salt and black pepper
Steps
- Season fish and sear it in oil until opaque and flaky; break it into large bite-size pieces.
- Sauté carrot and bell pepper for 3 minutes so they are tender but still colorful.
- Whisk coconut milk with lime zest, lime juice, garlic, salt and pepper.
- Fold fish, cooked vegetables, cucumber and cilantro into the coconut-lime sauce.
- Spoon over warm rice and serve at once.
