Syrian Fattet Hummus with chicken chickpeas yogurt and pine nuts

Ingredients

  • 8 oz boneless skinless chicken breast
  • 1 cup chicken broth
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 cup cooked chickpeas
  • 1 small pita, torn
  • 1/2 cup plain Greek yogurt
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 garlic clove, grated
  • 2 tbsp toasted pine nuts
  • 2 tbsp chopped parsley
  • 1/2 tsp kosher salt

Steps

  1. Poach chicken in broth with cumin, coriander, and half the salt until it reaches 165°F (74°C); shred it.
  2. Toast pita pieces in a 400°F (205°C) oven until crisp.
  3. Warm chickpeas in a little poaching broth.
  4. Mix yogurt, tahini, lemon juice, garlic, and the remaining salt until smooth.
  5. Layer pita, chickpeas, yogurt sauce, and chicken in two bowls; top with pine nuts and parsley.
