Surinamese Peanut Chicken with Green Beans and Rice, finished dish

Ingredients

  • 1 1/2 lb boneless, skinless chicken thighs, cut into pieces
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1/2 cup natural peanut butter
  • 1 1/2 cups low-sodium chicken broth
  • 1 tbsp soy sauce
  • 12 oz green beans, trimmed
  • 1 lime
  • 3 cups cooked rice
  • 2 scallions, sliced
  • Kosher salt

Steps

  1. Season chicken lightly and brown it in oil in a deep skillet.
  2. Add onion, garlic and ginger and cook until fragrant.
  3. Whisk peanut butter, broth and soy sauce and pour into the skillet.
  4. Cover and simmer 12 minutes, add green beans, then cook uncovered until beans are tender and chicken reaches 165°F, 7 minutes.
  5. Add lime juice and serve over rice with scallions.
