Sudanese Ful Medames with Tomato and Egg
Warm fava beans, tomatoes, tahini, and soft eggs make an aromatic Sudanese-inspired pantry dinner.

Ingredients
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 can fava beans, drained and rinsed
- 1 small tomato, diced
- 1/2 cup vegetable stock
- 1 tbsp lemon juice
- 1 tbsp tahini
- 2 eggs
- 1 small pita, warmed
- 1/2 cucumber, diced
- 2 tbsp chopped parsley
- Aleppo pepper or chili flakes
- Salt and black pepper
Steps
- Heat oil in a skillet and cook onion for 3 minutes. Add garlic and cumin and stir until fragrant.
- Add fava beans, tomato, and stock. Simmer 5 minutes, then crush about one third of the beans with a spoon.
- Stir together lemon juice and tahini with 1 tablespoon hot bean liquid until smooth, then fold it into the beans.
- Make two wells in the mixture, crack in the eggs, cover, and cook 4 to 6 minutes until the whites are set and yolks are as you like.
- Season with salt, pepper, and Aleppo pepper, taking care not to break the warm yolks.
- Serve with pita, cucumber, parsley, and an extra squeeze of lemon.
