Slovak Bryndzove Halusky with Bacon

Tender potato dumplings tossed with sheep cheese and crisp bacon turn this Slovak favorite into dinner for two.

Slovak potato dumplings with sheep cheese and bacon

Ingredients

  • 1 small russet potato, finely grated
  • 3/4 cup all-purpose flour
  • 1 egg
  • 1/4 tsp salt
  • 3 oz bryndza or feta plus ricotta
  • 3 bacon slices, diced
  • 2 tbsp sour cream
  • 1 tbsp chopped chives
  • Black pepper
  • Water for boiling

Steps

  1. Cook bacon in a skillet until crisp; drain on paper towel and reserve 1 teaspoon fat.
  2. Mix grated potato, flour, egg and salt into a thick sticky dough.
  3. Bring salted water to a gentle boil and drop in small pieces of dough using a spoon or board.
  4. Cook until dumplings float and are tender, 3 to 4 minutes; drain well.
  5. Toss hot dumplings with bryndza, sour cream and a little reserved bacon fat until creamy.
  6. Top with bacon, chives and black pepper.
