Slovak Bryndzove Halusky with Bacon
Tender potato dumplings tossed with sheep cheese and crisp bacon turn this Slovak favorite into dinner for two.

Ingredients
- 1 small russet potato, finely grated
- 3/4 cup all-purpose flour
- 1 egg
- 1/4 tsp salt
- 3 oz bryndza or feta plus ricotta
- 3 bacon slices, diced
- 2 tbsp sour cream
- 1 tbsp chopped chives
- Black pepper
- Water for boiling
Steps
- Cook bacon in a skillet until crisp; drain on paper towel and reserve 1 teaspoon fat.
- Mix grated potato, flour, egg and salt into a thick sticky dough.
- Bring salted water to a gentle boil and drop in small pieces of dough using a spoon or board.
- Cook until dumplings float and are tender, 3 to 4 minutes; drain well.
- Toss hot dumplings with bryndza, sour cream and a little reserved bacon fat until creamy.
- Top with bacon, chives and black pepper.
