Serbian Mućkalica Pork Pepper Skillet

Ingredients
- 12 oz pork tenderloin, sliced into bite-size pieces
- 1 tbsp neutral oil
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 cup crushed tomatoes
- 1 tsp sweet paprika
- 1/2 tsp smoked paprika
- 1/2 cup chicken stock
- 1 tbsp chopped parsley
- Fine sea salt, to taste
- Freshly ground black pepper, to taste
- Cooked rice or crusty bread, for serving
Steps
- Pat pork dry and season it with salt and pepper before it goes into the hot skillet.
- Heat oil over medium-high heat and brown pork quickly on all sides, then transfer it to a clean plate.
- Reduce heat to medium, add onion and peppers, and cook until softened and lightly charred at the edges.
- Add garlic, tomato paste, sweet paprika, and smoked paprika, stirring for 30 seconds so the spices bloom.
- Add tomatoes and stock, simmer for 8 minutes, then return pork and cook until it reaches 63 C / 145 F with a 3-minute rest afterward.
- Stir in parsley, taste for seasoning, and serve the pork pepper skillet with rice or bread.
