Serbian Mućkalica Pork Pepper Skillet, plated and ready to serve

Ingredients

  • 12 oz pork tenderloin, sliced into bite-size pieces
  • 1 tbsp neutral oil
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 cup crushed tomatoes
  • 1 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 1/2 cup chicken stock
  • 1 tbsp chopped parsley
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Cooked rice or crusty bread, for serving

Steps

  1. Pat pork dry and season it with salt and pepper before it goes into the hot skillet.
  2. Heat oil over medium-high heat and brown pork quickly on all sides, then transfer it to a clean plate.
  3. Reduce heat to medium, add onion and peppers, and cook until softened and lightly charred at the edges.
  4. Add garlic, tomato paste, sweet paprika, and smoked paprika, stirring for 30 seconds so the spices bloom.
  5. Add tomatoes and stock, simmer for 8 minutes, then return pork and cook until it reaches 63 C / 145 F with a 3-minute rest afterward.
  6. Stir in parsley, taste for seasoning, and serve the pork pepper skillet with rice or bread.
