Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground caraway
  • 1 can crushed tomatoes
  • 1 cup cabbage, chopped
  • 1 tablespoon apple cider vinegar
  • 1/4 cup parsley, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper, to taste

Steps

  1. Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
  2. Heat the olive oil in a skillet. Cook the onion, garlic, and ground caraway until fragrant.
  3. Add the crushed tomatoes and cabbage. Simmer the tomato sauce until the vegetables are tender.
  4. Toss the pasta with the tomato sauce, reserved pasta water, and apple cider vinegar.
  5. Stir in the parsley and parmesan cheese. Season with salt and black pepper, then serve hot.
