Salvadoran Bean and Cheese Pupusas with Curtido

Salvadoran Bean and Cheese Pupusas with Curtido, finished dish

Ingredients

  • 3 cups masa harina
  • 2 1/2 cups warm water
  • 1 tsp kosher salt
  • 1 cup refried beans
  • 1 1/2 cups shredded mozzarella
  • 3 cups finely shredded cabbage
  • 1 carrot, grated
  • 1/2 small onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/2 cup hot water
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • Vegetable oil, for the griddle

Steps

  1. Mix cabbage, carrot, onion, vinegar, hot water, oregano, red pepper and 1/2 teaspoon salt; rest 30 minutes.
  2. Mix masa harina, warm water and remaining salt into a soft dough; rest 10 minutes.
  3. Divide into 12 balls, make a well in each, add beans and cheese, seal and pat into 1/4-inch-thick discs.
  4. Lightly oil a griddle and cook pupusas over medium heat until browned and cooked through, 4 to 5 minutes per side.
  5. Drain curtido and serve alongside hot pupusas.
