Portuguese Bacalhau a Bras

Salt cod, fine potatoes, onions and softly set egg make this Lisbon classic manageable for two.

Portuguese salt cod with potatoes, egg and olives

Ingredients

  • 8 oz cooked flaked salt cod or cod fillet
  • 2 cups thin potato matchsticks
  • 1/2 small onion, thinly sliced
  • 2 garlic cloves, sliced
  • 3 eggs
  • 2 tbsp olive oil
  • 2 tbsp chopped parsley
  • 2 tbsp black olives
  • 1/2 lemon
  • Salt and black pepper

Steps

  1. If using raw cod, poach it gently until it flakes and reaches 145F; remove bones and shred.
  2. Bake or air-fry potato matchsticks until crisp and golden.
  3. Warm oil in a skillet and soften onion and garlic without browning.
  4. Add cod and potatoes, tossing gently until hot.
  5. Beat eggs with pepper, add them to the skillet and fold gently until softly but fully set.
  6. Finish with parsley, olives and lemon before serving.
