Potato cheese pierogi with caramelized onions and sour cream

Ingredients

  • 1 cup all-purpose flour
  • 1 egg
  • 3 tbsp warm water
  • 1 small potato, peeled and cubed
  • 3 oz farmer cheese or ricotta
  • 1/2 small onion, thinly sliced
  • 1 tbsp butter
  • 2 tbsp sour cream
  • 1 tbsp chopped chives
  • Salt and black pepper

Steps

  1. Boil potato until tender, drain and mash with cheese, salt and pepper.
  2. Mix flour, egg, water and a pinch of salt into a smooth dough; rest 10 minutes.
  3. Roll dough thin, cut circles, fill each with potato mixture and seal edges firmly.
  4. Boil pierogi in simmering water until they float, then cook 2 minutes more.
  5. Cook onion slowly in butter until deeply golden.
  6. Serve pierogi with onions, sour cream and chives.
