Persian Adas Polo Lentils with Dates

Ingredients
- 1/2 cup brown lentils
- 1/2 cup basmati rice
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 4 pitted dates, chopped
- 2 tbsp raisins
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cumin
- 1 1/2 cups vegetable broth
- 2 tbsp plain yogurt
- 1/2 tsp kosher salt
- 1 tbsp chopped parsley
Steps
- Simmer lentils in water until just tender, about 18 minutes, then drain.
- Cook rice in vegetable broth until tender.
- Cook onion in olive oil until deeply golden; reserve half for garnish.
- Fold lentils, dates, raisins, cinnamon, cumin, salt, and the remaining onion into the rice and warm through.
- Serve with yogurt, parsley, and the reserved crisp onion.
