Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon fennel seeds
  • 1 can crushed tomatoes
  • 1 cup spinach, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup dill, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper, to taste

Steps

  1. Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
  2. Heat the olive oil in a skillet. Cook the onion, garlic, and fennel seeds until fragrant.
  3. Add the crushed tomatoes and spinach. Simmer the tomato sauce until the vegetables are tender.
  4. Toss the pasta with the tomato sauce, reserved pasta water, and lemon juice.
  5. Stir in the dill and parmesan cheese. Season with salt and black pepper, then serve hot.
