Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground sumac
  • 1 can crushed tomatoes
  • 1 cup cherry tomatoes, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup mint, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper, to taste

Steps

  1. Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
  2. Heat the olive oil in a skillet. Cook the onion, garlic, and ground sumac until fragrant.
  3. Add the crushed tomatoes and cherry tomatoes. Simmer the tomato sauce until the vegetables are tender.
  4. Toss the pasta with the tomato sauce, reserved pasta water, and lemon juice.
  5. Stir in the mint and parmesan cheese. Season with salt and black pepper, then serve hot.
