Palestinian Qidreh Lamb Chickpeas Rice
Lamb, chickpeas, fragrant rice, and toasted almonds make a warmly spiced Palestinian-style one-pot supper for two.

Ingredients
- 8 oz lamb stew meat, cubed
- 1 tbsp oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1/2 tsp ground cardamom
- 1/2 tsp ground cumin
- 1 1/2 cups chicken broth
- 3/4 cup cooked chickpeas
- 1/2 cup basmati rice
- 2 tbsp sliced almonds
- 1 tbsp chopped parsley
- 1/2 tsp kosher salt
Steps
- Brown lamb in oil, then add onion, garlic, cardamom, cumin, and half the salt.
- Add broth, cover, and simmer until lamb is tender, about 40 minutes.
- Stir in chickpeas and rice, adding a splash of water if necessary; cover and cook until rice is tender.
- Toast almonds in a dry skillet until fragrant.
- Rest the pot 5 minutes and finish with almonds and parsley.
