Odia Dalma Lentil Vegetable Stew
Red lentils and seasonal vegetables make this mild Odia-style dalma a quick, hearty plant-based meal.

Ingredients
- 140 g red lentils, rinsed
- 1 small potato, cubed
- 1 carrot, cubed
- 150 g pumpkin, cubed
- 100 g green beans, cut short
- 1 small tomato, diced
- 1 tsp mustard seeds
- 1 dried red chile
- 1/2 tsp turmeric
- 1 tsp ground cumin
- 600 ml vegetable stock or water
- 2 tbsp chopped cilantro
- 2 cups steamed rice or millet, for serving
Steps
- Rinse the red lentils until the water runs mostly clear and cut all vegetables into similar-sized pieces.
- Combine lentils, potato, carrot, pumpkin, beans, tomato, turmeric, and stock in a pot and bring to a boil.
- Lower to a steady simmer and cook uncovered for 18 to 20 minutes, stirring occasionally, until the lentils are soft and vegetables are tender.
- Heat 1 tablespoon oil in a small pan; sizzle mustard seeds and dried chile for 30 seconds without burning them.
- Pour the hot tempering into the stew, add ground cumin and salt, and simmer for 2 more minutes.
- Finish with cilantro and serve the dalma with steamed rice or millet.
