Odia Dalma Lentil Vegetable Stew, finished dish

Ingredients

  • 140 g red lentils, rinsed
  • 1 small potato, cubed
  • 1 carrot, cubed
  • 150 g pumpkin, cubed
  • 100 g green beans, cut short
  • 1 small tomato, diced
  • 1 tsp mustard seeds
  • 1 dried red chile
  • 1/2 tsp turmeric
  • 1 tsp ground cumin
  • 600 ml vegetable stock or water
  • 2 tbsp chopped cilantro
  • 2 cups steamed rice or millet, for serving

Steps

  1. Rinse the red lentils until the water runs mostly clear and cut all vegetables into similar-sized pieces.
  2. Combine lentils, potato, carrot, pumpkin, beans, tomato, turmeric, and stock in a pot and bring to a boil.
  3. Lower to a steady simmer and cook uncovered for 18 to 20 minutes, stirring occasionally, until the lentils are soft and vegetables are tender.
  4. Heat 1 tablespoon oil in a small pan; sizzle mustard seeds and dried chile for 30 seconds without burning them.
  5. Pour the hot tempering into the stew, add ground cumin and salt, and simmer for 2 more minutes.
  6. Finish with cilantro and serve the dalma with steamed rice or millet.
