Nigerian Ofada Rice with Beef Pepper Sauce

Ingredients
- 3/4 cup brown rice
- 1 1/2 cups water
- 8 oz beef sirloin, diced
- 1 tbsp oil
- 1 small onion, diced
- 1 red bell pepper, chopped
- 1 small tomato, chopped
- 1 tsp tomato paste
- 1/2 tsp ground crayfish or smoked paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp kosher salt
- 1/2 cucumber, sliced
Steps
- Cook brown rice in water according to package timing until tender; keep covered.
- Brown beef in oil in a skillet, then transfer to a plate.
- Cook onion, bell pepper, and tomato until very soft; stir in tomato paste, crayfish or paprika, cayenne, and salt.
- Return beef with 1/4 cup water and simmer until the sauce is thick and beef is tender.
- Serve pepper beef over rice with cucumber slices.
