Nigerian Ofada Rice with Beef Pepper Sauce and cucumber

Ingredients

  • 3/4 cup brown rice
  • 1 1/2 cups water
  • 8 oz beef sirloin, diced
  • 1 tbsp oil
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 1 small tomato, chopped
  • 1 tsp tomato paste
  • 1/2 tsp ground crayfish or smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/2 cucumber, sliced

Steps

  1. Cook brown rice in water according to package timing until tender; keep covered.
  2. Brown beef in oil in a skillet, then transfer to a plate.
  3. Cook onion, bell pepper, and tomato until very soft; stir in tomato paste, crayfish or paprika, cayenne, and salt.
  4. Return beef with 1/4 cup water and simmer until the sauce is thick and beef is tender.
  5. Serve pepper beef over rice with cucumber slices.
